What each ingredient does

Chicken breast
Provides the main protein; cooking until no longer pink makes it safe and tender.
Orange juice
Adds sweetness and acidity to the sauce, balancing the briny olives.
White wine vinegar
Adds sharp acidity that brightens the sauce and cuts the richness of the olives.
Green olives
Contribute salty, briny flavor to the sauce.
Almonds
Add crunch and a toasty, nutty flavor to the sauce.

The step that matters

Cook the chicken until no longer pink in the center. Thick breasts can look browned outside while the center stays undercooked. Cooking until the center is no longer pink ensures it is safely done, while overcooking dries out the lean meat.
