What each ingredient does

Chicken
Browning in oil builds color and savory flavor on the outside of the pieces.
Rice
Absorbs the broth and tomato liquid as it cooks, setting the final texture of the dish.
Chicken broth
Provides the liquid that the rice absorbs, carrying savory flavor throughout.
Tomatoes
Add acidity, moisture and color to the cooking liquid.
Turmeric
Gives the rice its yellow color and a mild, earthy aroma.
Onion
Softens as it cooks, adding sweetness and aromatic base flavor.

The step that matters

Simmer the rice covered without lifting the lid. Rice cooks by absorbing liquid in a sealed pan. Lifting the lid lets steam escape, which can leave grains unevenly cooked and the liquid not fully absorbed.

Swap the clove
