What each ingredient does

Cooked rice
Forms the bulk of each cup, giving the pudding its body and chewy texture.
Eggs
Set during baking to bind the custard so each cup holds its shape.
Milk
Forms the liquid base of the custard, providing moisture and a creamy texture.
Sugar
Adds sweetness and helps balance the chocolate flavor.
Semi-sweet chocolate chips
Melt during baking to add chocolate flavor and richness to each cup.
Chocolate syrup
Adds chocolate flavor and sweetness throughout the custard.

The step that matters

Bake in a hot water bath until just set. Eggs thicken as they heat, and overbaking makes them curdle and turn grainy. The gentle heat of a water bath keeps the custard smooth and evenly set.
