What each ingredient does

Rice
Forms the bulk of the pilaf, absorbing the broth as it bakes to become tender.
Chicken broth
Cooks the rice and adds savory flavor as the liquid is absorbed.
Butter
Adds richness and helps the vegetables brown lightly while they cook.
Raisins
Add pockets of sweetness that contrast with the savory rice and vegetables.
Mushrooms
Contribute earthy flavor and a tender, meaty texture to the pilaf.
Tart red apple
Adds bright acidity and crisp texture that balances the sweet raisins.

The step that matters

Cover and bake until the liquid is fully absorbed. Covering traps steam so the rice cooks evenly; lifting the lid early lets steam escape and can leave the grains firm or the liquid unevenly absorbed.

Swap the raisin

How well each one fits the dish's main ingredients (rice, thyme, pepper, chicken, butter, mushroom, carrot):

  1. Lemonfits better
  2. Limefits better
  3. Coconutfits better
  4. Raisinthe original

Fit is the average pairing score against rice, thyme, pepper, chicken, butter, mushroom, carrot. Candidates are from the same food group and used in at least 100 recipes.
