Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked rice
Provides the body of the pudding, as its starch thickens the cooking milk.
Milk
Forms the creamy liquid that the rice absorbs and cooks in.
Butter
Adds richness and a smooth, silky mouthfeel to the finished pudding.
Seedless raisins
Add sweetness and a chewy texture through the pudding.

The step that matters

Stirring the rice and milk over medium heat. Milk sugars and proteins scorch and stick to the pan base quickly. Regular stirring keeps the heat even while the rice starch slowly thickens the milk as it absorbs the liquid.
