What each ingredient does

Pork loin chops
Provide the main protein, which stays moist when baked covered in broth.
Diet bread
Cubed and baked, it soaks up flavour and forms the body of the stuffing.
Mushrooms
Release moisture and savoury flavour as they sauté into the stuffing.
Chicken broth
Adds moisture and savoury flavour while the chops bake covered.

The step that matters

Baking the chops covered in broth. Pork cooked to rare first and then baked covered in broth stays moist; the covered bake keeps steam in, so the chops do not dry out before the stuffing is added and baked.
