What each ingredient does

Tofu
Forms the main body of the dish, with a firm texture that holds up to baking.
Bread crumbs
Form a crisp coating that browns in the oven.
Tamari
Adds salty, savory flavor to the marinated tofu.
Olive oil
Adds fat that carries flavor and helps the coating brown.
Garlic
Adds aroma and pungent flavor to the marinade.

The step that matters

Cooking the roux for a couple of minutes. Cooking flour in fat for a short time cooks out its raw, pasty taste and lets the flour thicken the milk evenly when it is added.
