Why it works: Onion and garlic match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 29,058 recipes. Both carry furaneol, which smells caramel, strawberry. The science ↓
Chicken Paprikash
Ingredients
Directions
Prepare
Preheat oven to 375 °F.
In a small bowl, combine the sherry and chicken stock.
Pound the chicken breasts to ¼‑inch thickness.
In a small bowl, combine the yogurt, sour cream, and paprika.
Cook the vegetables
In a 10‑inch non‑stick fry pan, brown the onions, garlic, and mushrooms by adding 1 tablespoon of the combined liquid, stirring until the pan dries, then repeating with another tablespoon of liquid. Season the vegetables with salt and pepper.
Transfer the vegetables to a plate and set the pan aside.
Cook the chicken and finish
Reheat the 10‑inch pan, adding 2 tablespoons of the combined liquid. Lay the chicken pieces in the pan and cook on medium‑high heat for 2 minutes.
Turn the chicken over, add the remaining 2 tablespoons of liquid to the pan, and cook the chicken for a final 2 or 3 minutes.
Reduce heat to low.
Stir 1 tablespoon of the hot stock from the pan into the yogurt mixture, then pour the yogurt over the chicken pieces, stirring to coat them well.
Heat for 1 minute.
Stir in the onions and mushrooms, and cook for 1 more minute.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Chicken breasts
- Provides the main protein; pounding to even thickness helps it cook through evenly.
- Plain non-fat yogurt
- Forms a tangy sauce that gently coats the chicken and adds moisture.
- Reduced-fat sour cream
- Adds richness and creaminess to the sauce, smoothing its texture.
- Sweet hungarian paprika
- Gives the sauce its characteristic sweet, earthy flavor and red color.
- Fresh mushrooms
- Release moisture as they cook, adding savory depth and a tender texture.
- Onion
- Softens and sweetens as it browns, building the base flavor of the sauce.
The step that matters
Keep the heat low when adding the yogurt mixture. Yogurt and sour cream can curdle and separate when exposed to high heat, so reducing the heat before adding them keeps the sauce smooth.
Swap the clove
How well each one fits the dish's main ingredients (sherry, chicken, onion, garlic, mushroom, pepper, yogurt):
- Thymefits better
- Cuminfits better
- Corianderfits better
- Clovethe original
