What each ingredient does

Olive oil
Carries the spices and helps the vegetables brown and soften in the oven.
Baking potato
Becomes tender and starchy when baked, giving the dish body.
Tomato
Releases moisture as it bakes, helping the vegetables soften in their own juices.
Onion
Softens and turns sweeter as it bakes, adding depth to the mix.
Lemon
Adds acidity and bright aroma that balance the sweetness of the baked vegetables.

The step that matters

Judging when the vegetables are done. The record gives a wide bake time of 30 minutes to an hour, so the vegetables should be checked for tenderness and light browning rather than timed alone. Potato pieces need to be fully tender, since undercooked starch stays firm and chalky.
