Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked rice
Forms the body of the pudding as it simmers and absorbs the cream.
Half & half
Adds richness and a creamy, moist texture to the pudding.
Caramel sauce
Provides sweetness and the dulce de leche flavor throughout the pudding.
Sour cream
Adds tang and a smooth, thick texture once stirred in off the heat.

The step that matters

Cook for 10 minutes, stirring constantly. The rice and dairy can scorch on the bottom of the pan if left unattended, and constant stirring keeps the starch and sugars evenly heated. Scorched sugar from the caramel sauce gives a bitter taste that cannot be fixed later.

Swap the vanilla

How well each one fits the dish's main ingredients (rice, sauce, cream, almond):

  1. Coconutfits better
  2. Avocadofits better
  3. Vanillathe original
  4. Raisinfits about as well

Fit is the average pairing score against rice, sauce, cream, almond. Candidates are from the same food group and used in at least 100 recipes.
