Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken breasts
Provide the main protein, which browns on the skillet surface for flavor.
Green pepper
Adds crisp-tender texture and fresh, slightly bitter vegetable flavor.
Mushrooms
Release moisture and savory flavor as they cook down into the sauce.
Stewed tomatoes
Supply acidity, liquid and body that combine into the sauce.
Sherry wine
Adds aromatic, slightly sweet and acidic depth and helps lift browned flavors from the pan.

The step that matters

Browning the chicken. Chicken must sit in a hot, not crowded, pan so its surface browns through the Maillard reaction. Crowding or low heat steams the meat, leaving it pale and less flavorful.

Flavor stand-ins for the tomato

How well each one fits the dish's main ingredients (chicken, pepper, olive, mushroom, sherry, wine, rice):

  1. Tomatothe original
  2. Capsicumabout as good a flavor fit

Fit is the average pairing score against chicken, pepper, olive, mushroom, sherry, wine, rice. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
