Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure that sets the cake's crumb as it bakes.
Eggs
Bind the batter and add structure and richness as they set.
Buttermilk
Adds moisture and acidity that tenderises the crumb and reacts with the leavener.
Baking soda
Reacts with the acidic buttermilk to produce gas that makes the cake rise.
Cocoa
Gives the cake its chocolate flavour and dark colour.
Sugar
Sweetens the cake and helps it brown and stay moist.

The step that matters

Cool 15 minutes and then remove from pan. Removing the cake too early can make it break, while leaving it too long lets it stick as the sugars cool and harden. Timing the release keeps the crumb intact.

Swap the cocoa

How well each one fits the dish's main ingredients (flour, buttermilk, sugar, egg, vanilla):

  1. Almondfits better
  2. Chestnutfits better
  3. Hazelnutfits better
  4. Cocoathe original

Fit is the average pairing score against flour, buttermilk, sugar, egg, vanilla. Candidates are from the same food group and used in at least 100 recipes.
