What each ingredient does

Rice
Absorbs broth as it cooks, thickening the soup and adding body.
Chicken
Provides the main protein and savory meaty flavor in the soup.
Chicken broth
Forms the liquid base that carries the flavor of every other ingredient.
Carrots
Add sweetness and color, and soften during simmering.
Lime juice
Adds acidity that brightens the flavor of the soup.

The step that matters

Add the chicken cubes and simmer until cooked. Chicken cubes are small, so they can overcook and turn tough within a few minutes. Checking for doneness at the low end of the 5 to 10 minute range helps keep the meat tender.
