Ingredients

Directions

Make the batter

  1. Beat the eggs, sweet chestnut puree, oil, and milk together.

  2. Mix all the dry ingredients.

  4. Let the mixture stand for a couple of hours before cooking.

What each ingredient does

Eggs
Bind the batter and give the pancakes structure as they set.
Sweet-chestnut puree
Adds moisture, body and a naturally sweet, nutty flavour.
Rice flour
Provides the main starch structure while staying light and tender.
Cornmeal
Adds a slightly gritty texture and toasty flavour to the pancakes.
Bicarbonate of soda
Reacts with the tartaric acid to produce gas that lifts the pancakes.
Tartaric acid
Reacts with the bicarbonate of soda to create bubbles for rising.

The step that matters

Keep the pan from smoking. Oil that is too hot smokes and scorches the outside before the centre sets, and it can turn the pancakes bitter. Moderate heat lets the batter rise and brown evenly.

Swap the chestnut

How well each one fits the dish's main ingredients (egg, milk, rice, flour, olive, sugar):
