Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken thighs
Provide the main protein, which turns tender and juicy when broiled.
Lemon juice
Acidity that tenderizes the chicken during its 20-minute soak and adds bright flavor.
Olive oil
Fat that carries the seasonings and helps the surface brown under the broiler.
Margarine
Fat that adds richness and helps the brushed coating brown and flavor the chicken.
Dry white wine
Adds acidity and aromatic depth to the parsley and garlic coating.

The step that matters

Remove the chicken from the lemon juice before broiling. Acid in lemon juice gradually changes the meat's surface; leaving it in too long makes the texture mushy, so the chicken should be drained and the juice discarded before cooking.

Swap the clove

How well each one fits the dish's main ingredients (chicken, parsley, garlic, lemon, white wine, olive, onion):

  1. Thymefits better
  2. Basilfits better
  3. Rosemaryfits better
  4. Clovethe original

Fit is the average pairing score against chicken, parsley, garlic, lemon, white wine, olive, onion. Candidates are from the same food group and used in at least 100 recipes.
