Directions

Prepare the beef

  1. Partially freeze the beef; slice thinly across the grain into bite-size strips.

What each ingredient does

Beef round steak
Provides the main protein; browning it quickly in hot oil builds savory flavor and keeps it tender.
Mushrooms
Release moisture as they cook and add earthy savory flavor and a tender texture.
Spinach leaves
Wilt briefly in residual heat, adding soft texture and a mild green flavor to the salad.
Tomato
Adds juiciness and mild acidity that brightens the savory meat and vegetables.

The step that matters

Brown the beef in batches. Crowding the pan drops its temperature so the meat steams instead of browning. Cooking half at a time in hot oil gives the Maillard browning that builds deep flavor.
