What each ingredient does

Tempeh burgers
Firm, protein-rich base that absorbs the marinade and browns on the grill.
Tamari
Adds salty, savory depth and helps the tempeh take on color while grilling.
Pineapple juice
Adds sweetness and acidity that balance the salty marinade.
Fresh pineapple
Adds juicy sweetness and acidity to the fresh salsa.

The step that matters

Grilling the marinated tempeh. Sugars in the pineapple juice and mirin can scorch over direct heat, so medium-hot coals and turning the burgers help them brown evenly without burning.
