What each ingredient does

Mushrooms
Provide the bulk of the spread and, when browned, savory depth.
Olive oil
Carries flavor and adds richness, helping the mushrooms brown in the pan.
Pecorino romano
Adds salty, savory umami and body to the finished spread.
Onion
Builds a sweet, aromatic base as it softens in the oil.
Garlic
Adds pungent aroma that mellows with gentle cooking.
Lemon juice
Adds acidity that brightens the rich mushroom flavor.

The step that matters

Browning the mushrooms on high heat. Mushrooms release water as they cook; they must cook off that moisture before browning. Crowding the pan or stopping too early leaves them steamed and bland, while proper browning builds deep savory flavor through the Maillard reaction.
