What each ingredient does

Chicken pieces
Provide the main protein, which becomes tender during the long baking.
Hoisin sauce
Adds sweetness, savory depth and color to the marinade and glaze.
Lemon juice
Adds acidity that brightens the marinade and helps tenderize the chicken.
Cooked rice
Forms the base that soaks up the reserved marinade for moisture and flavor.
Onion
Builds a sweet, aromatic base for the marinade.

The step that matters

Refrigerate the chicken overnight in the marinade. The marinade needs many hours to penetrate the chicken, and turning the bag keeps every piece evenly coated so the flavor and tenderness are consistent.
