What each ingredient does

Eggs
Bind the rice and cheese mixture and set into a firm, sliceable bake.
Rice
Provides the bulk and starchy body that holds the filling together.
Monterey jack cheese
Melts into the filling, adding richness and helping bind it together.
Ground beef
Supplies savory, browned meat flavor and substance to the filling.
Frozen chopped spinach
Adds vegetable body and earthy flavor to the filling.
Milk
Adds moisture and softness to the egg custard that sets the bake.

The step that matters

Bake until set. Eggs set as they heat, and pulling the dish too early leaves a loose, wet center that will not hold clean squares. Baking until set ensures the custard firms throughout.
