- 1 medium onion, chopped
- 1 clove garlic, minced
- 1 tablespoon butter or margarine
- 1 cup uncooked rice
- 1/8 teaspoon ground saffron
- 1 3/4 to 2 cups chicken broth*
- 2 tablespoons chopped fresh parsley

Directions
Cook onion and garlic in margarine in 2- to 3-quart saucepan until soft. Add rice and saffron; stir 2 to 3 minutes. Add broth and bring to a boil. Lower heat to simmer; cover and cook 15 to 20 minutes or until rice is tender and liquid is absorbed. Add parsley and fluff with fork.
