Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown rice flour
Provides the main structure of the pancake, with a mild, slightly nutty flavour.
Cornstarch
Lightens the texture, making the pancakes more tender and less dense.
Egg
Binds the batter and helps set the structure as the pancake cooks.
Yogurt
Adds moisture and mild acidity, contributing tenderness to the pancakes.
Baking powder
Releases gas in the batter, helping the pancakes rise and puff.
Vegetable oil
Adds fat for moisture and tenderness, and helps prevent sticking.

The step that matters

Cook pancakes until golden brown on both sides, 2 minutes or less. Gluten-free rice flour batters have little structure to hold them together, and baking powder gas escapes quickly. Cooking over medium heat in a pan that is not too hot lets the centre set before the outside burns, while browning comes from the Maillard reaction on the surface.
