Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fresh lavender flowers
Provide the floral aroma and flavour that infuse into the water.
White wine vinegar
Adds acidity that brightens the flavour and helps the jelly set.
Sugar
Sweetens the jelly and, with the pectin, helps it set firm.
Liquid pectin
Gelling agent that gives the jelly its set once boiled.

The step that matters

Boiling with the pectin. Pectin sets only when the sugar and acid are at the right concentration and the mixture reaches a full rolling boil. Boiling for exactly one minute after adding pectin, then removing from heat promptly, prevents a weak set or overcooked, runny jelly.
