What each ingredient does

Eggs
Set when baked, binding the rice and vegetables into a sliceable frittata.
Cooked rice
Forms the bulk of the dish, giving body and a tender, starchy texture.
Parmesan cheese
Adds savory, salty flavor and helps the top brown during baking.
Cheddar cheese
Melts over the top, adding richness and a golden, slightly crisp crust.
Milk
Thins the egg mixture, adding moisture and a softer, custardy set.
Spinach
Adds moisture-free bulk, green color and earthy flavor; it must be well-drained.

The step that matters

Drain the spinach well. Excess water from thawed frozen spinach dilutes the egg custard and can make the frittata soggy or slow to set, so squeeze out as much liquid as possible before cooking.
