What each ingredient does

Chickpeas
Provide the bulk and body of the patty mixture once blended smooth.
Egg whites or bread crumbs
Bind the soft mixture so the patties hold their shape while cooking.
Sunflower seeds
Add nutty texture and body when ground to a coarse meal.
Mushrooms
Add moisture and savory depth to the patty mixture.
Sesame seeds
Form a crisp, toasty coating on the outside of the patties.

The step that matters

Stirring in the egg whites or bread crumbs. The mixture is soft and wet, so the binder must be fully incorporated. Without it, the patties can fall apart on the grill or under the broiler, since egg proteins and bread crumbs absorb moisture and set when heated.
