What each ingredient does

Brown rice
Forms the bulk of the pilaf and absorbs flavor from the broth it was cooked in.
Broccoli
Adds body and tender texture while its edges brown slightly in the hot skillet.
Onion
Builds savory sweetness as it softens and begins to brown in the oil.
Mushrooms
Release moisture and savory depth as they cook down until tender.
Pecans
Add crunch and toasty, nutty flavor that contrasts with the soft rice.
Carrots
Add sweetness and tender-crisp texture to the vegetable mix.

The step that matters

Cook the onion until it just begins to brown. Browning develops sweet, savory flavors through the Maillard reaction, but over-browning turns onion bitter. Keep the heat steady and stir so the vegetables brown evenly.
