What each ingredient does

Rice
Absorbs the broth and puree as it cooks, forming the bulk and texture of the dish.
Poblano peppers
Provide the main flavor and a mild heat that colours the rice green.
Chicken broth
Supplies the liquid that cooks the rice and carries the flavor through the dish.
Vegetable oil
Coats the rice grains and helps them brown lightly before the liquid is added.
Garlic
Adds pungent aroma that mellows as the dish simmers.

The step that matters

Toasting the rice in oil. Browning the rice grains in oil before adding liquid gives a nutty flavor and helps the grains stay separate. Stopping at light browning avoids bitterness from scorching.
