What each ingredient does

Lean ground beef
Forms the main body of the meatballs and provides savory meaty flavor.
Bread
Adds moisture and softness so the meatballs stay tender rather than dense.
Cornstarch
Coats the meatballs and thickens the sauce into a glossy glaze.
Soy sauce
Adds salty, savory depth and helps color the meatballs and sauce.
Brown sugar
Adds sweetness that balances the soy sauce and pineapple in the sauce.
Pineapple tidbits
Adds sweetness and bright acidity that cut through the rich beef.

The step that matters

Cook the sauce, stirring, until it thickens. Cornstarch only thickens fully when the sauce is heated enough and stirred. Stopping early leaves a thin sauce, while stirring keeps the starch from clumping.

Swap the pineapple

How well each one fits the dish's main ingredients (beef, bread, mustard, garlic, ginger, sauce, pepper):

  1. Limefits better
  2. Avocadofits better
