Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cocoa
Provides the chocolate flavor and deep color of the brownie base.
Eggs
Bind the batter and help set the brownies' structure as they bake.
All-purpose flour
Provides structure so the brownie bites hold their shape.
Vegetable oil
Adds moisture and a tender, fudgy texture to the brownies.
Sugar
Sweetens the batter and adds to the moist, tender crumb.
Baking powder
Helps the batter rise slightly for a lighter texture.

The step that matters

Removing from the oven at the right moment. Baking just until set and cracked keeps the centers fudgy; overbaking dries the brownies and makes them firm rather than moist.
