Why it works: Condensed milk and evaporated milk match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 168 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

What each ingredient does
- Butter
- Adds fat and richness to the crust and fudge layer, giving tenderness and flavor.
- All-purpose flour
- Provides the structure that holds the shortbread-like crust together.
- Cocoa
- Supplies the chocolate flavor and deep color of the fudge layer.
- Sweetened condensed milk
- Adds sweetness and creamy body that sets into a fudgy texture.
- Eggs
- Bind the filling and help it set firm when baked.
- Almonds
- Add crunch and a toasted nutty flavor that contrasts with the soft filling.
The step that matters
Baking the filling until the center is set. Eggs and condensed milk firm up as they heat. Pulling the pan too early leaves a wet center, while overbaking can make the fudge dry and crumbly once cooled.
