Why it works: Turkey and chicken work together. They rank in the top 7% of all ingredient pairs, and cooks put them together in 688 recipes. Both carry (z)-4-decenal, which smells green, must. The science ↓
Golden Roast Turkey a L'orange
Ingredients
Directions
Prepare
Preheat oven to 375 °F (190 °C).
Cut turkey giblets into small pieces and set aside for the sauce.
Peel the oranges, divide them into sections, and set aside for garnish.
Cut the orange peel into half‑inch slices.
Melt the margarine in a small saucepan over high heat; add the sliced orange peel and sauté quickly for a minute.
Stuff the orange peel into the turkey.
In a small bowl, mix together the honey, cooking oil, and orange juice.
Brush the mixture all over the turkey, reserving half for later.
Roast the turkey
Season the turkey with salt and pepper, truss it, transfer to a large roasting pan, and roast in the oven at 375 °F for about 1 hour.
Brush the remaining honey‑orange mixture on the turkey, return to the oven, and roast for 60–90 minutes more until cooked.
Check the internal temperature with a meat thermometer; it must reach at least 160 °F (71 °C).
After it is cooked, turn off the heat and leave the turkey in the oven for about 15–20 minutes before serving.
Make the gravy
For the gravy (do this while roasting the turkey): melt butter in a small saucepan over high heat.
Sauté chopped onions and giblets for about 2–3 minutes.
Deglaze with wine, then reduce for 3 minutes.
Add the orange marmalade, bouillon cube, and water (or chicken stock).
Bring to a quick boil, then reduce heat and let it simmer for about 5–10 minutes.
Add the cream, then thicken with some cornstarch dissolved in cold water.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Turkey
- The main roasting protein; it cooks through and holds the stuffing and glaze.
- Honey
- Adds sweetness and helps the glaze brown on the turkey's surface.
- Orange marmalade
- Adds sweetness and bitter citrus notes to the gravy and helps it brown.
- Cornstarch
- Thickens the gravy as it heats, giving it body.
- Cream
- Adds richness and a smoother texture to the gravy.
- White wine
- Deglazes the pan, lifting browned bits into the gravy for flavour.
The step that matters
Check the internal temperature before serving. Turkey can look done while the thick parts are still undercooked. A thermometer reading of at least 160 °F (71 °C) confirms it is safe, and the resting time lets juices settle back into the meat.
Swap the orange
How well each one fits the dish's main ingredients (turkey, honey, butter, pepper, chicken, white wine, onion):
