Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Turkey breast
- Provides the main lean meat that is roasted to become the centerpiece of the dish.
- Honey
- Adds sweetness and helps the glaze caramelize and brown on the surface.
- Melted butter
- Carries fat over the surface, adding richness and promoting gentle browning.
- Dijon mustard
- Adds sharp, tangy flavor that balances the sweetness of the glaze.
- Cornstarch
- Thickens the gravy into a smooth sauce when heated with liquid.
- Orange marmalade
- Contributes sweetness and citrus flavor to the gravy.
The step that matters
Simmer the gravy after adding cornstarch. Cornstarch must be dissolved in cold water first and then heated briefly so its starch granules swell and thicken the gravy smoothly without lumps.
