Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Provides the butterscotch sweetness and caramel flavour when boiled with butter.
Egg yolk
Thickens the filling as it cooks and adds richness.
Flour
Thickens the custard filling so it sets smoothly.
Butter
Adds fat and rich flavour to the butterscotch base.
Milk
Forms the liquid base that thickens into the custard.
Egg white
Whipped with sugar to form the meringue topping that browns in the oven.

The step that matters

Cook the filling until it thickens. Flour and egg yolk thicken only when the mixture is hot enough; undercooking leaves a runny filling, while overheating can curdle the eggs. Stir steadily while it cooks.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, flour, milk, butter, egg):

  1. Vanillathe original
  2. Raisinfits about as well
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against sugar, flour, milk, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
