What each ingredient does

Dried tart cherries
Provide chewy texture and concentrated fruity sweetness to the relish.
Cherry preserves
Add sweetness and a syrupy body that binds the relish together.
Red wine vinegar
Adds acidity that balances the sweetness of the cherries and preserves.
Red onion
Contributes sharp, pungent flavor that mellows during chilling.
Fresh thyme
Adds herbal aroma that complements the fruit and vegetables.

The step that matters

Microwave until hot, then let stand. Heating softens the dried cherries and helps them absorb the preserves and vinegar, plumping them and blending flavors. Overheating can scorch the sugars in the preserves, so watch the time closely.
