Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air, giving the muffins a tender, rich crumb.
Eggs
Bind the batter and add structure and richness to the crumb.
All-purpose flour
Forms the main structure of the muffins as gluten develops.
Baking powder
Releases gas in the batter to make the muffins rise.
Honey
Adds sweetness and helps keep the muffins moist.
Strawberries
Add fruity moisture and flavour throughout the muffins.

The step that matters

Add the dry ingredients and milk just until moistened. Once flour meets liquid, gluten begins to form. Overmixing develops too much gluten, making the muffins tough and dense instead of tender.
