Directions

Prepare

  1. Preheat oven to 325°F. Lightly oil bottom and sides of a high-sided 9x13 pan or soufflé dish.

  2. Beat eggs until light and fluffy. Add milk, hot sauce, and salt, and mix.

Layer

  1. Pour 1/3 to 1/2 of the milk mixture into the pan, add 1/3 to 1/2 of the bread cubes, and press down into the milk mixture.

  2. Layer about 1/3 to 1/2 of the spinach, then corn, scallions, bell pepper, and 1 cup of cheese.

  3. Repeat layering, reserving 1 cup of cheese and some milk mixture.

  4. When complete, pour the remaining milk mixture over the top, ensuring all bread soaks.

Bake and serve

  1. Bake 1 hour. Top with the remaining 1 cup of cheese, return to oven to brown for about 10 minutes. Remove from oven and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the custard and set the pudding into a sliceable structure as it bakes.
Milk
Forms the custard that soaks the bread and keeps the pudding moist.
Bread
Absorbs the custard and provides the body that holds the pudding together.
Cheddar cheese
Melts into the layers and browns on top, adding richness and savory flavor.
Spinach
Adds moisture and a mild, earthy green flavor between the bread layers.

The step that matters

Let the bread soak fully before baking. Dry patches of bread stay firm and pasty, while fully soaked bread absorbs custard and sets evenly into a tender pudding.

Swap the spinach
