Spiced Garlic Mushrooms

Ingredients

Directions

Make the garlic base

  1. Heat oil in a large skillet over medium‑low heat.

  2. Add garlic, bay leaf, coriander, and oregano; cook, stirring occasionally, until garlic starts to brown, about 5 minutes.

  3. Stir in wine or water and bring to a boil.

Cook the mushrooms

  1. Add mushrooms, parsley, salt, and pepper.

  2. Reduce heat, cover, and cook 10 minutes, shaking pan occasionally.

  3. Remove pan from heat and, using a slotted spoon, transfer mushrooms to a serving dish.

  4. Return skillet to heat and bring juices to a boil.

  5. Cook until liquid is reduced by half, about 5 minutes.

  6. Discard bay leaf and pour liquid over mushrooms, cover, and set aside to cool.

Serve

  1. If not serving right away, refrigerate and bring to room temperature before serving.

What each ingredient does

Garlic
Browning in the oil adds a sweet, savoury aroma that flavours the whole dish.
Button mushrooms
Their moisture releases into the pan, forming the juices that are reduced into a sauce.
White wine or water
Provides liquid that boils and reduces into a concentrated, flavourful sauce.
Lemon juice
Adds acidity that brightens the rich, earthy flavour of the mushrooms.
Olive oil
Carries the garlic and herb flavours and helps brown the garlic evenly.

The step that matters

Reducing the juices by half. Mushrooms release a lot of liquid; reducing it concentrates their flavour into a sauce. Stopping too early leaves the dish watery, while over-reducing can scorch the garlic and herbs left in the pan.
