Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the bulk of the dish and browns in spots for savoury flavour.
Red potatoes
Add starch and body, holding their shape while staying tender when steamed and heated.
Red onion
Softens and browns, adding sweetness and depth to the base of the stir fry.
Spinach
Wilts quickly under cover, adding moisture and a tender, leafy texture.
Lemon juice
Adds acidity that brightens the spices and balances the richness of the oil.

The step that matters

Browning the cauliflower. Cauliflower releases water as it cooks, so it steams instead of browning if the pan is crowded or not hot enough. Keeping the heat high and stirring only as needed lets the surface brown, which builds flavour.
