Spicy Vegetable Pancakes

Ovenbroiler
Time12 to 15 minutes

Ingredients

Directions

Prepare the seasoned oil and vegetables

  1. Preheat broiler.

  2. In a small saucepan, heat 2 Tbsp olive oil over medium heat.

  3. Add 1 tsp curry powder, 1 tsp crushed red pepper flakes and a little salt. Cook, stirring constantly, for 1 minute.

  4. Remove from heat.

  5. Arrange vegetables on a broiler pan and brush with the seasoned oil.

  6. Broil vegetables until beginning to brown, 12 to 15 minutes, turning once.

Make the raita

  1. Meanwhile, make raita.

  2. In a serving bowl, whisk 1 cup low-fat plain yogurt and 2 tsp honey until blended. Stir in 2 fresh red chilies, seeded and chopped; 2 Tbsp chopped cilantro; 1 Tbsp chopped fresh mint; 1/2 cucumber, peeled and diced.

Make and cook the pancakes

  1. Make pancakes.

  2. In a large bowl, mix 1 1/2 cups all-purpose whole-wheat flour and a pinch of salt. Beat 3 large eggs well, then add to the flour mixture.

  3. Continue mixing and gradually stir in 1 1/2 cups low-fat milk. Add 2 fresh chilies, green and red, seeded and chopped; 1/2 tsp ground cumin; 1 Tbsp chopped cilantro, and mix well.

  4. Let batter stand for 30 minutes.

  5. In a large nonstick skillet, heat 1/2 tsp butter over medium heat.

  6. Pour in about one-quarter of the batter, tilting the pan so the batter spreads evenly. When bubbles begin to appear on top of the pancake, flip it over with a spatula and cook for about 1 minute on the other side.

  7. Transfer the pancake to a plate and keep warm.

  8. Cook remaining pancakes as directed.

Serve

  1. To serve, roll vegetables in each pancake, and serve with any remaining vegetables and raita.

What each ingredient does

Eggs
Bind the batter and help set the pancakes as they cook.
All-purpose whole-wheat flour
Forms the batter's structure and body for the pancakes.
Low-fat milk
Hydrates the flour and loosens the batter to a pourable consistency.
Red onion, bell peppers, zucchini and tomatoes
Provide the vegetable filling, and broiling browns their surfaces and concentrates their flavour.
Low-fat plain yogurt
Forms the cool, creamy base of the raita, balancing the spicy vegetables.

The step that matters

Broiling the vegetables until beginning to brown. Vegetables cook unevenly under a broiler, so turning them once helps them brown and soften evenly instead of scorching in spots. Browning adds flavour through the Maillard reaction.
