Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the crust together as it bakes.
Butter
Creates a tender, flaky texture as it is cut into the flour and melts in the oven.
Eggs
Bind the dough and help the filling set into a smooth, sliceable custard.
Cream cheese
Adds richness and a creamy body that firms as the filling sets.
Mangos
Supply the main fruit flavor and moisture to the filling.
Sugar
Sweetens the crust and filling and helps the crust brown.

The step that matters

Blind baking the pastry shell. Pricking the crust and weighting it with foil and beans keeps it from puffing and shrinking, so the shell stays flat and holds the filling. Cooling it fully before adding the filling prevents a soggy base.

Swap the mango
