What each ingredient does

Tofu
Soft tofu blends into the soup, giving it a creamy, thick body without dairy cream.
Milk
Adds creaminess and mild richness that softens the acidity of the tomato and lime.
Mango
Contributes sweetness and fruity aroma that balances the tomato's acidity.
Tomato
Provides acidity and savory body as it softens during sauteing.
Onion
Sweetens and builds a savory base as it softens in the oil.
Lime juice
Adds bright acidity that lifts the sweetness of the mango.

The step that matters

Cool before blending the tofu. Adding tofu to very hot liquid can make it separate or curdle, and blending it while still hot may cause the soup to spatter. Letting it cool briefly helps keep the texture smooth and creamy.
