Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shiitake mushrooms
Provide meaty texture and savory depth as they soften and release their juices.
Silken tofu
Blended smooth, it gives the sauce a creamy body without dairy.
Soy milk
Adds liquid and richness that thickens gently as it simmers with the tofu.
Lime juice
Adds acidity that brightens the savory, rich flavors of the sauce.

The step that matters

Simmering the soy milk and tofu mixture. Soy milk and tofu can curdle or separate if boiled hard or for too long. Keep the heat gentle so the sauce stays smooth and creamy.
