Make the aromatic base

  1. Heat oil in a heavy medium saucepan over medium heat.

  2. Add garlic; sauté until deep brown, about 3 minutes.

  3. Discard garlic.

  4. Add onion to saucepan and sauté until tender, about 5 minutes.

Cook the rice

  1. Add rice; stir for 5 minutes.

  2. Add 3 cups hot water, parsley, and salt (mixture will sputter).

  3. Bring to boil, stirring.

  4. Reduce heat to medium-low, cover, and simmer until almost all liquid is absorbed, about 15 minutes.

  5. Stir rice, then re-cover and continue to simmer until all liquid is absorbed and rice is tender, about 5 minutes longer.

  6. Remove from heat; let stand, covered, 10 minutes.

  7. Discard parsley; fluff rice with fork.

What each ingredient does

Medium-grain white rice
Starch that absorbs the water and cooks into tender, separate grains.
Garlic
Browning in the hot oil builds a deep, savory aroma.
White onion
Softens into the oil, adding sweetness and savory depth to the rice.
Canola oil
Fat that carries the garlic and onion flavor and helps coat the grains.

The step that matters

Sauté the garlic until deep brown. Garlic turns bitter when it burns, while deep brown gives toasty flavor. Watch closely, because the garlic is removed after browning and its flavor carries into the rice.
