What each ingredient does

Chicken
Provides the main protein, which becomes tender as it cooks in the gravy.
Plain yoghurt
Adds tang and creaminess to the gravy, and its proteins can curdle if overheated.
Onions
Cooking until browned builds sweetness and body in the gravy base.
Tomatoes
Break down into the gravy base, adding acidity, moisture and body.
Cooking oil
Carries the spices and aromatics, helping release their fat-soluble flavour.

The step that matters

Adding yoghurt. Yoghurt can split or curdle when it meets high heat. Cooking the gravy at a moderate heat and adding the yoghurt once the tomatoes have softened helps keep it smooth and creamy.
