What each ingredient does

Tofu
Provides the main protein body, and frying gives it a golden, browned surface and a firmer bite.
Tomato paste
Adds concentrated acidity, savoury depth and a deeper red colour to the sauce.
Ground peanuts
Add nutty flavour and body to the sauce, helping it cling to the tofu.
Lemon juice
Adds acidity that brightens the sauce and balances the chili heat.
Ginger
Adds a sharp, aromatic warmth when briefly sautéed in the oil.

The step that matters

Frying the tofu until golden brown. Browning through dry, hot oil creates a crisp surface that holds its shape and resists going soggy when it simmers in the sauce.
