Ingredients

Directions

Cook the meat

  1. Make a bouquet garni of onions, cinnamon, cloves, 8 peppercorns, 4 cardamoms, and coriander.

  2. Put the bag of spices in a pan, add meat, salt, and enough water to cover. Cook until the water reduces to half.

  3. Remove the bag of spices and squeeze out the flavor.

  4. Add the sugar and juice from 1/2 lemon; cook until the liquid is syrupy.

Cook the rice

  1. In another pan, boil the rice in water with the remaining spices and some salt until barely tender; drain.

Assemble and bake

  1. In a casserole, put a layer of rice, then the meat, then the remaining rice.

  2. Pour saffron milk over the top, sprinkle with nuts, cover tightly, and bake like pulao (350 °F for 30–45 minutes).

What each ingredient does

Lamb
Provides the main protein, whose juices and collagen enrich the cooking liquid and give tender meat.
Rice
Forms the bulk of the dish and absorbs the spiced broth as it bakes.
Sugar
Caramelizes slightly into the syrupy liquid, adding sweetness that balances the warm spices.
Lemon juice
Adds acidity that brightens the rich meat and spiced liquid.
Saffron
Contributes a distinctive aroma and golden colour to the rice.
Ghee (in the method)
Adds fat that carries the spice aromas and gives the rice a rich flavor.

The step that matters

Boil the rice only until barely tender. The rice keeps absorbing liquid and cooking while it bakes covered in the casserole. Fully cooked rice at the boiling stage turns mushy and breaks apart in the oven.

Swap the onion

How well each one fits the dish's main ingredients (cinnamon, clove, cardamom, coriander, lamb, rice, sugar):

  1. Sweet potatofits better
  2. Carrotfits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against cinnamon, clove, cardamom, coriander, lamb, rice, sugar. Candidates are from the same food group and used in at least 100 recipes.
