What each ingredient does

Bhindi
Forms the main body of the dish; frying first gives it a light browned surface and firmer texture.
Tomatoes
Break down into a sauce that provides moisture, acidity and body to the masala.
Onions
Fried to golden brown, they add sweetness and savoury depth to the gravy.
Garlic
Frying releases its aroma into the oil, building the base flavour of the masala.

The step that matters

Cooking the masala on slow fire. Tomatoes and spices must cook down gently until the oil separates from the sauce. Rushing on high heat can scorch the spices and leave the tomatoes raw and watery.
