Ingredients

Directions

Make the soup base

  1. Stir onions, apples, carrots, raisins, garlic, and butter in a 5- to 6-quart pan over medium‑high heat until onions are limp, 10 to 12 minutes.

  2. Add curry powder and flour and stir to mix well.

  3. Stir in broth, bring to a boil over high heat, then reduce heat and simmer, stirring occasionally, until carrots are very tender to bite, about 20 minutes.

Blend and serve

  1. Blend soup in a blender, a portion at a time, until very smooth.

  2. Return blended soup to pan, add cream, and stir over medium heat until hot, 4 to 5 minutes.

  3. Ladle into bowls and season with salt, pepper, and chutney to taste.

What each ingredient does

Curry powder
Provides the main spiced aroma that defines the soup's flavour.
Flour
Thickens the broth so the blended soup has body.
Onions
Soften into a sweet, savoury base that gives the soup depth.
Apples
Break down during simmering to add sweetness and fruity body.
Carrots
Soften and blend smooth, adding sweetness and thickness.
Chicken broth
Forms the liquid base that cooks and carries the other ingredients.

The step that matters

Blend in portions until very smooth. Blending hot soup in small batches keeps the blender from overfilling and steam from forcing the lid off. A fully smooth texture depends on the vegetables being fully tender before blending, so the carrots must be cooked through first.

Swap the apple
