Directions

Make the base

  1. Dissolve sahlab in one cup of milk.

  2. Bring the rest of the milk to a boil with the sugar.

  3. Add the cold milk and starch mixture slowly to the hot milk, stirring constantly.

  4. Pulverize the mustikah and mix with several teaspoons of sugar. Add to the cooking milk mixture.

  5. Boil gently over low fire for 10 minutes, stirring constantly. Stir occasionally while cooking.

  6. Remove from fire.

  7. Flavor with ma'ez zahr.

Freeze and serve

  1. Freeze either in crank type freezer or in refrigerator trays.

  2. When mixture is frozen in refrigerator trays it should be removed and beaten three times during freezing to break up ice crystals.

  3. Just before serving, take the trays of ice cream from the freezer unit and allow to rest several minutes in the chilling part of the refrigerator.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the main body of the ice cream, providing creaminess and liquid for freezing.
Sugar
Adds sweetness and lowers the freezing point, keeping the ice cream softer.
Sahlab (cornflower)
Starch that thickens the milk mixture and gives the ice cream a smooth, dense texture.
Mustikah (gum arabic)
Stabilizer that helps keep the texture smooth and slows ice crystal growth.

The step that matters

Adding the starch mixture to the hot milk. Adding the cold starch mixture slowly while stirring constantly prevents lumps and ensures the starch disperses evenly so it can thicken smoothly as the milk heats.
