What each ingredient does

Eggs
Set into soft curds that add richness and body to the fried rice.
Ground beef
Provides the savory, browned meat that forms the main protein of the dish.
Cold cooked rice
Dry, cold grains separate and fry crisply instead of turning soggy or mushy.
Soy sauce
Adds salty, savory flavor and gives the rice its color.

The step that matters

Cook the eggs for only about 45 seconds. Eggs cook quickly over high heat and turn rubbery if overcooked. Removing them while just set keeps them tender, and they rejoin the rice at the end.

Swap the clove

How well each one fits the dish's main ingredients (sauce, sugar, egg, beef, carrot, celery, ginger):

  1. Cinnamonfits better
  2. Turmericfits better
  3. Nutmegfits about as well
  4. Clovethe original

Fit is the average pairing score against sauce, sugar, egg, beef, carrot, celery, ginger. Candidates are from the same food group and used in at least 100 recipes.
